Sardinian Flower 24 Months

Raw material: Raw sheep's milk from Sardinian breed sheep raised in the wild


Appearance: Cylindrical shape with sides of 20 cm diameter and height of the rounded side of 11/12 cm. The crust is dark due to the light smoking, of an intense olive color. The paste is compact and crumbly of a decidedly straw-yellow color.


Flavour: Strong, spicy, with sheep and vegetal sensations of dried fruit and medicinal plants and with notes of smoke


Highly matured (24 months)


Raw whole milk pecorino cheese, without ferments and with natural capping; lightly smoked with Mediterranean scrub wood


Curiosity: The cheeses are treated in the crust only with oil. This pecorino is appreciated not only for its flavour, but also because each form speaks of the territory. It is produced only with the milk of Sardinian breed sheep raised by the company in the wild and the diet is enriched only with organic feed. The animals are never given antibiotics and even the rennet used for coagulation is obtained from Sardinian breed lambs. For smoking Fiore Sardo, only woods of essences from the Mediterranean scrub and downy oak are used and it is left to mature in natural cellars


Use: Excellent as a meal accompanied by fresh summer salads, as an after-meal dish as well as grated on first courses, soups and risottos.

    Structure:   Compact in the juvenile forms, grainy in the seasoned ones

    Smell and aroma:  Aromatic, toasted if smoked

    Taste and sensations in the mouth:  Piccante more or less intense depending on the seasoning

    These indications are general, in the winter months, if the product is available or not perishable, the order will be shipped as soon as possible.
