Pure honey made in one of the most exclusive locations in Sardinia. On the hills behind Costa Rei, where the sea breeze and mountain dew arrive, a small beekeeping company collects the precious honey, without adding anything else.

5 Reasons to use it every day:

1) Excellent sweetener: Thistle honey, with its floral and enveloping flavour, lends itself very well to even rather daring culinary combinations: we can use it to accompany some meat dishes, fresh ricotta or, according to a more classic scheme, together with cheeses with intense flavour. In fact, thistle honey tends to mitigate and make strong flavors more homogeneous. Alternatively, it is considered exceptional as a sweetener for black tea or spread on toast and bread.

2) Excellent digestive qualities: We can take a few spoonfuls of thistle honey after a heavy meal: thanks to its digestive qualities we will facilitate the assimilation process and make the work of our body easier.

3) Excellent cholagogue: As well as other types of honey, thistle honey is an important ally for our liver: it is a property directly related to the digestive one described a few lines ago. Thistle honey helps detoxify and stimulates liver activity, improving digestion and avoiding the feeling of tiredness and discomfort that we have when we have overindulged in food.

4) Ally of the heart: Thistle honey is commonly known for its beneficial effects on our circulatory system: it is a good cardio-stimulator and facilitates blood circulation in those subjects who suffer from delicate problems of this kind.

5) Rich in vitamins and minerals: Thistle honey, in addition to being a source of vitamins and minerals, is very rich in many other nutrients with antioxidant strength capable of counteracting the feared free radicals within our body.

  • Wild thistle honey is a niche honey that is difficult to find in areas that are not Sicilian or Sardinian.

Like all honeys it is invigorating, antioxidant, antiseptic, antibacterial, healing and  alkalizing: therefore compared to sugar  it does not promote tooth decay  And  facilitates the fixation of mineral salts in the human body. More  thistle honey has digestive properties, stimulates and detoxifies the liver, improves circulation and is a mild vasoconstrictor.

The organoleptic properties of thistle nectar give the honey a distinctive strong aroma and flavor: sweet with floral scents and a slightly astringent aftertaste. The light amber color acquires light opalescent shades with natural crystallization at lower temperatures.

It is extraordinary in sweetening white and green tea which enhance its floral-fruity aroma.

Excellent pairing with the most delicate spreadable cheeses to which it gives character.
