Strawberry tree honey, a defined honey  bitter
La plant of the strawberry tree, in Sardinian lyon or lions, it is widespread throughout Sardinia, especially in the mountains. The very inviting looking red fruits could be misleading, but their acrid flavor manages to sweeten only when the berry is very ripe.

The charm of this honey comes from its contradictions: the sweet taste at first impact immediately gives way to the bitter aftertaste. It is never cloying and enthusiasts could eat whole jars! It is so particular that usually even those who do not like other honeys like it.
Its flavor is unique e hard to describe in words. The aroma could recall that of ground coffee, and the bitterish aftertaste is unmistakable: once tasted it will be remembered forever.
 
  Like eucalyptus honey, strawberry tree honey is also very amber, but when it crystallizes it becomes light hazelnut. Crystallizing one becomes fine and creamy paste, without the graininess typical of other honeys. 
In the kitchen it can be used in different ways, it can accompany lard or i formaggi seasoned. It is excellent in seadas, in ice cream, or on white chocolate mousses and will surely add a unique note to each one.
