Raw material: Organic raw sheep's milk from Sardinian sheep reared in the wild
Appearance: Cylindrical in shape with faces with a diameter of 20 cm and a height of the rounded heel of 11/12 cm. The rind is dark due to the light smoking, with an intense olive color. The paste is compact and crumbly with a decidedly pale straw colour
Taste: Strong, spicy, with ovine and vegetal sensations of dried fruit and medicinal plants and with notes of smoking
Seasoning
-Matured to an average maturity of 12 months
Pecorino cheese made from raw whole milk, without ferments and with natural capping; lightly smoked with Mediterranean scrub woods
Curiosity: The cheeses are organic and treated on the rind only with oil. This pecorino is popular not only for its flavor, but also because each shape speaks of the territory. It is produced only with the milk of Sardinian sheep raised by the company in the wild and the diet is enriched only with organic feed. The animals are never given antibiotics and even the rennet used for coagulation is obtained from Sardinian lambs. For smoking the Fiore Sardo, only Mediterranean scrub and oak woods are used and it is left to mature in natural cellars
Use: Excellent as a meal accompanied by fresh summer salads, at the end of a meal as well as for grating on first courses, soups and risottos
