 In the northern part of Sardinia le pabassinas they are biscuits whose dough is enriched with raisins, walnuts decorated with a white icing.

 In the more southern areas, on the other hand, the pabassinas are prepared starting from the sapa. The saba is thickened and cooked with fine durum wheat semolina.

This compound is further flavored with abundant addition of raisins, almonds, orange peel and other flavors that vary according to the production area. The final result is a compact compound that can be easily modeled with your hands.
