In the northern part of Sardinia le pabassinas they are biscuits whose dough is enriched with raisins and walnuts decorated with a white icing.

In the southernmost areas, on the other hand, the pabassinas are prepared starting from the sapa. The saba is thickened and cooked with fine durum wheat semolina.

This compound is further flavored with the abundant addition of raisins, almonds, orange peel and other aromas that vary according to the production area.

 The end result is a compact compound that can be easily shaped by hand.
