Spiny Sardinian artichokes are prepared by carefully selecting the most tender parts of the artichoke and preserved in oil, and are among the most popular preserves in oil chosen by Sardinians and non-Sardinians alike.

After being deprived of the hardest leaves through a cleaning process that is strictly done by hand, they are preserved in the most natural way possible, to allow the most refined palates to savour the delicious quality of our artichoke.


Firm and tasty and with an indistinguishable flavour, they are excellent both as an appetizer and as an aperitif.

  • The spiny artichoke of Sardinia has very ancient origins. In fact, this vegetable comes from the East, brought to the island by the Phoenicians. Others, however, are convinced that it even comes from Ethiopia. There is evidence of its cultivation in Sardinia as early as the eighteenth century, in works such as "Agriculture of Sardinia" of 1780 and "The rustic life of Sardinia reflected in the language" of 1921. It is only from the twentieth century, however, that the cultivation of the Sardinian spiny artichoke becomes specialized throughout the region, becoming known  even outside the region.

    The spiny artichoke is grown in most of Sardinia, involving all the provinces of the island. The typicality of the Sardinian spiny artichoke is guaranteed by the pedoclimatic conditions of the Sardinian territory, its special cultivation and development as cultural heritage.
