What can help us enjoy summer in Sardinia in advance?

for all of you.


Simple, summery and with all the taste of summer.

Polpa Di Riccio is back

here is a simple simple recipe.


SPAGHETTINI 400 gr

SEA URCHINS pulp - 100 gr

Clove of garlic 2

PARSLEY 1 bunch

EXTRA VIRGIN OLIVE OIL (EVO) 4 tablespoons

Salt to taste.

EXECUTION

Place a pot of salted water on the fire and as soon as it boils, add the noodles.

Heat a generous round of oil in a pan, preferably aluminum, together with two slightly crushed cloves of unpeeled garlic and the parsley stalks.

Let the oil flavor with the herbs for a few minutes over high heat, then remove both the parsley stalks and the garlic.

Remove the pan from the heat and add the sea urchin pulp to the still hot oil, diluting it with the oil itself.

Drain the pasta and transfer it directly to the pan with the sauce; mix to mix everything well.

Add some chopped parsley and sauté everything.



Spread the noodles on serving plates and finish with a little more chopped parsley.





Very important thing: don't forget the right wine for the summer !!
